Simple Soup Recipe

Soup of the day is one of the compulsory dish that my family had for ages. It is amazing that simple tofu soup with kelp could make a nutritious and refreshing meal.

No wonder everyone loves tofu soup! This is the BEST Chinese tofu soup! 

This simple soup recipe is non-spicy and doesn’t require any extra seasonings. All you need are red dates and rock sugar to produce the natural sweetness of this soup.

You can replace red dates with carrots or pumpkins which are high in beta-carotene and vitamin A to improve your vision.

Kelp and tofu soup has the lowest calories and helps you to lose weight since it is meatless.

Great for vegetarians.


Benefits of Eating Kelp

Kelp is also known as an algae or seaweed, found in the sea. Adding kelp into your soup would give you a powerpack nutrients such as: calcium, iodine ,antioxidant ,vitamin C  and iron. Old wife tales claimed that eating kelps help to revive your energy especially when you feel tired and fatigue. In addition, it helps to stabilize your body temperature and metabolism.



Why use Soft Tofu

Tofu is made from soy beans, soaked in water to soften the beans and later grind them into white murky soybean milk. I prefer to use soft tofu for soup recipes because it is easy to cook. 

Actually, you put in the soft tofu as the last ingredient in the soup because they will break apart as they are fragile and break easily.

Furthermore, soft tofu are easily eaten for toddlers, kids and old folks. Soft tofu are easily digested and absorb into your digestive system quickly.



Kelp and Soft Tofu Recipe

Bring to boil half pot of water, by peachpurple

Ingredients to prepare:

  • 60g of kelp soaked
  • 1 pack of soft tofu
  • 8 red dates
  • 1 rock sugar 
  • half pot of medium soup pot of water


Instructions to boil Kelp and Soft Tofu Soup

  1.  Soak kelp throughly.
  2. Wash and cut into shreds.
  3. Rinse soft tofu and cut into large cubes.
  4. Wash red dates and remove cores.
  5. Bring to boil pot of water.
  6. Put in kelps and red dates.
  7. Boil for 1 hour to soften the kelp.
  8. Put in the soft tofu cubes and rock sugar.
  9. When the rock sugar dissolves, turn off heat.
  10. Serve hot with white rice.

Tips and tricks:

  • If you wish to have a quick soup, boil the kelp and red dates in a slow cooker first thing in the morning.
  • By mid afternoon, you can have a nice bowl of Kelp and Tofu Soup.
  • To soften the kelps, try soaking in hot water. It takes 15 minutes to soften them.
