Brownie Cupcake Recipe – Only 2 Ingredients!

Brownie Cupcakes

I had these at my sisters, and I was instantly hooked……especially when she told me how they were made. Only two ingredients. I was also impressed that one cupcake was only 180 calories.  The first time I made them at my house, I thought that they would be awesome with a glaze on top.  So I searched my recipe box and I ran across a sugar glaze recipe that was super simple, only three ingredients!  So I made some and drizzled it on these cupcakes, and wow!  Even more delicious, so I have included that recipe below, in case you want to make some for your brownie cupcakes.

Cupcake Recipe

Ingredients:

  • 1 box of devil’s food cake mix
  • 1 15 ounce can of pumpkin

Directions:

Preheat oven to 400 degrees
Dump the can of pumpkin in your mixing bowl and beat on low at first and after it’s loosened up, increase to medium for one minute
Decrease the speed back to low and add the cake mix, a little at a time
Beat the mixture on low until completely mixed
It will be thick, but do NOT add anything to it
Place cupcake cups in the wells of a cupcake tin and spoon the batter into them about 3/4 full
Cook for 20 minutes or until a toothpick comes out clean

Glaze Recipe

Ingredients:

  •  1 1/4 cups confectioners’ sugar
  • 2 to 3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Directions:

Mix all ingredients, starting with 2 tablespoons of milk.  I use a fork, to mix, not a mixer.  If the glaze is too thick, then add more milk a tiny bit at a time until you have the consistency that you like.

You can also add flavorings to this glaze, if you want to, like lemon juice, cocoa powder or banana flavoring.  Personally, one of my favorites is to drizzle the glaze on the cupcakes and then sprinkle coconut on before the glaze sets, so it sticks.  I really love coconut!  Sometimes I add 1/2 cup of chopped nuts to the cupcakes before baking and then dust the tops with powdered sugar.  The possibilities are endless and delicious!
